Pulichappam

Ingredients:

1 cup raw rice / pachari
1/4 cup urad dal
1/2 cup grated coconut
1/4 tsp instant yeast
2 tsp sugar
3/4 tsp salt
1 tbsp coconut oil
1/4 cup shallots, sliced
few curry leaves

Preparation:

  1. Soak the raw rice in water for 4-5 hours.
  2. Wash and soak urad dal in little water for 4-5 hours.
  3. In a blender , add the urad dal along with its water and grind for 2-3 minutes.
  4. Then add drained rice and grated coconut to this and grind well adding about 1/2 cup of water to a smooth paste. ( The consistency should be in between idli batter and dosa batter).
  5. Transfer this to a bowl and add sugar, yeast and salt and mix well.
  6. Keep it covered for 6-7 hours or overnight for fermentation.
  7. Heat 1 tbsp oil in a pan and sauté the sliced shallots till light brown. Add chopped curry leaves and sauté. Transfer it to a plate.
  8. Heat a pan or appachatti, spread little oil in the centre and add little sautéed shallot mix and pour a ladleful of batter.
  9. Cook covered at low flame for 3-4 minutes.
  10. Then add little sautéed shallot mix on top. Flip the appam and cook the other side till done.
  11. Remove from the pan and repeat the same with the remaining batter.
  12. Serve with any spicy curry of your choice…
