Mango Chocolate Chip Muffins

Ingredients:

2 cups plain flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup mango puree
1/2 cup yogurt
1/2 cup oil
1 tsp vanilla essence
3/4 cup chocolate chips

Preparation:

  1. Preheat the oven to 180 degree celcius. Line a 12 hole muffin tin with paper cases.
  2. In a mixing bowl, combine plain flour, sugar, baking powder, baking soda and salt and keep it aside.
  3. In another bowl, add mango puree, yogurt, oil and vanilla essence and combine well.
  4. Then slowly add the wet ingredients to the dry ingredients and gently combine together. Do not overmix the batter.
  5. Add chocolate chips to the batter and gently mix to combine.
  6. Divide the mixture between the paper cases and sprinkle some chocolate chips on top.
  7. Bake them in the preheated oven for about 20-25 minutes or until the muffins are golden brown and a toothpick inserted comes out clean.
  8. Transfer the muffins to a wire rack and leave to cool completely…
