Unakka Chemmeen – Muringayila Choru / Dried Prawns – Drumstick Leaves Rice

Ingredients:

1 cup matta rice / parboiled rice
1/2 cup dried prawns / unakka chemmeen
1/2 cup drumstick leaves / muringayila
1/4 cup shallots
1/2 tsp turmeric powder
3 tsp kashmiri chilli powder
salt to taste
3 tbsp coconut oil

Preparation:

  1. Cook the rice adding enough water and salt and keep it aside.
  2. Crush together shallots, turmeric powder and kashmiri chilli powder and keep it aside.
  3. Heat oil in a pan and add the cleaned dried prawns and fry well.
  4. Add the crushed mixture and saute well till the raw smell goes.
  5. Add the drumstick leaves and saute for 2 minutes.
  6. Add the cooked rice and enough salt to this and mix well for 3-4 minutes. Switch off the flame and then serve..
