Lemon Dates Pickle


12-15 small lemons / 5 large lemons
20 dates, pitted and chopped
1 tbsp ginger, thinly sliced
12 garlic cloves, sliced
4 green chillies, slit
2 sprig curry leaves
3-4 tbsp kashmiri chilli powder
3/4 tsp asafoetida
1/2 tsp fenugreek powder
1 tsp mustard seeds
1 1/2 cup boiling water
1/4 cup vinegar
salt to taste
1 1/2 tsp + 1 1/2 tsp sugar
3-4 tbsp gingely oil


  1. Steam the lemons for 12-15 minutes until they turn soft. Cool them completely and the cut each into pieces.
  2. Transfer to a bowl and add enough salt and 1 1/2 tsp sugar and mix well and keep it aside for 5 hours.
  3. In a bowl, mix chilli powder with little water to a paste and keep it aside.
  4. Heat oil in a pan and splutter mustard seeds.
  5. Add garlic, ginger, green chillies and curry leaves and saute well.
  6. Reduce the flame to low and add chilli powder paste and mix well.
  7. When oil separates, add asafoetida and fenugreek powder and saute for a minute.
  8. Add chopped dates to this and mix well. Add 1 1/2 cup of boiling water and mix well.
  9. Add lemon to this and mix well. ( Don’t cook the lemon , it will taste bitter.)
  10. Add salt and vinegar and mix well. When it boils and starts to thicken , add 1 1/2 tsp sugar and mix well. Switch off the flame.
  11. Allow it to cool completely and store in an air tight glass container/ bottle… Keep refrigerated…
