Ingredients:
2 big ripe avocadoes ( 1 cup avocado, mashed )
2 cups plain flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
2 large eggs
1 tsp vanilla essence
1/2 cup milk
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole muffin tin with paper cases.
- In a bowl, sift together plain flour, baking powder, baking soda and salt.
- Scoop out avocadoes into a large bowl and mash it with a fork.
- Add sugar to this and beat well using an electric mixer.
- Add eggs one at a time and beat well after each addition.
- Add vanilla essence and beat again.
- Add flour mixture in batches and fold it gently with a spatula and then beat using a mixer.
- Add milk to this and beat well till combined.
- Divide the batter between the paper cases and then bake for 18-20 minutes until golden or until a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely…
