Passionfruit and White Chocolate Chip Muffins


2 cups self raising flour, sifted
1/2 cup caster sugar
2 large eggs
1/2 cup (125 g ) melted butter
1/3 cup milk
1/4 cup passionfruit pulp
1 tsp vanilla essence
1/2-3/4 cup (100 g )white chocolate chips / buttons


  1. Preheat the oven to 200 degree celcius. Line a 12 hole muffin tin with paper cases.
  2. Mix together flour, sugar and white chocolate chips in a large bowl.
  3. In a bowl, add eggs, melted butter, milk, passionfruit pulp and vanilla essence and whisk well till well combined.
  4. Add this wet ingredients to the flour mixture and mix just enough to combine. Do not overmix.
  5. Divide the mixture between the paper cases and then bake in the oven for 15-20 minutes until a toothpick inserted comes out clean.
  6. Transfer the muffins to a wire rack and leave to cool completely…
