Ingredients:
1 cup basmati rice
1 small onion , chopped
1 cup mint leaves
4 garlic cloves
1/2 inch ginger
2 green chillies
1/4 tsp turmeric powder
1 sprig curry leaves
1 1/2 tbsp lemon juice
1 tbsp chana dal
3/4 tsp mustard seeds
1/2 tsp cumin seeds
1 tbsp urad dal
1/4 cup ground nuts
10 cashew nuts
2 dry red chillies
salt to taste
2 tbsp ghee
Preparation:
- Wash the rice and cook in a deep pan adding about 4-5 cups of water and salt till done. Drain the water and keep it aside.
- Grind together mint leaves, garlic, green chillies, ginger and salt adding little water and keep it aside.
- Heat ghee in a thick bottomed pan and splutter mustard seeds and cumin seeds.
- Add chana dal, urad dal, cashew nuts and ground nuts and fry at low flame.
- Add dry red chillies, curry leaves and chopped onion and fry for a minute.
- Add mint paste and saute well at low flame for 2 minutes.
- Add turmeric powder and mix well for 2 minutes till water dries.
- Add cooked rice and little salt and mix well.
- Finally add lemon juice, mix well and cook for 2-3 minutes on low flame. Remove from the flame and serve hot…
