Mint Lemon Rice


1 cup basmati rice
1 small onion , chopped
1 cup mint leaves
4 garlic cloves
1/2 inch ginger
2 green chillies
1/4 tsp turmeric powder
1 sprig curry leaves
1 1/2 tbsp lemon juice
1 tbsp chana dal
3/4 tsp mustard seeds
1/2 tsp cumin seeds
1 tbsp urad dal
1/4 cup ground nuts
10 cashew nuts
2 dry red chillies
salt to taste
2 tbsp ghee


  1. Wash the rice and cook in a deep pan adding about 4-5 cups of water and salt till done. Drain the water and keep it aside.
  2. Grind together mint leaves, garlic, green chillies, ginger and salt adding little water and keep it aside.
  3. Heat ghee in a thick bottomed pan and splutter mustard seeds and cumin seeds.
  4. Add chana dal, urad dal, cashew nuts and ground nuts and fry at low flame.
  5. Add dry red chillies, curry leaves and chopped onion and fry for a minute.
  6. Add mint paste and saute well at low flame for 2 minutes.
  7. Add turmeric powder and mix well for 2 minutes till water dries.
  8. Add cooked rice and little salt and mix well.
  9. Finally add lemon juice, mix well and cook for 2-3 minutes on low flame. Remove from the flame and serve hot…
