Floral Cupcake Basket

Masha Allah…Kids surprised us with this beautiful and yummy cupcake basket on our Anniversary 🙂

Ingredients:

For Cupcakes:

1 1/4 cup plain flour/ all purpose flour
1 1/2 tsp baking powder
2 large eggs
1/2 cup (125 gm) unsalted butter, at room temperature
1/4 cup milk
1/2- 3/4 cup sugar
1/4 tsp salt
1 tsp vanilla essence

For Icing:

100 gm butter, softened
3 cup icing sugar
2 tbsp milk
1 tsp vanilla extract/essence
food colour/ gel

artificial flowers and leaves

Preparation:

For cupcakes:

  1. Preheat the oven to 180 degree celcius. Line 12 muffin cups with paper liners.
  2. In a bowl, sift all purpose flour, baking powder and salt together and keep it aside.
  3. Beat eggs in another bowl and add  milk and vanilla essence and beat till it becomes very fluffy and keep it aside.
  4. In a large bowl, add butter and sugar and mix well till sugar is dissolved and the mixture is creamy.
  5. Mix in the egg- milk mixture little by little to the butter mixture (step 3 to step 4) and then add the flour mixture (step 2) and stir well until it becomes smooth . Do not overmix.
  6. Divide the batter into prepared muffin pan. Bake them for 15-20 minutes or until a tooth pick inserted comes out clean. Remove to a wire rack to cool.

For Icing:

  1. Cream the butter with an electric mixer for about 2-3 minutes. Using low speed , mix in the icing sugar, milk and vanilla essence and beat until creamy and fluffy.
  2. Divide the icing into 3 parts and add food colouring of your choice and mix well.
  3. Pipe or swirl the icing on the cupcakes as shown in this link.

Assembling the basket:

  1. Place paper towels / styrofoam in the base of the basket and add some beads to add some weight to the bottom of the basket.
  2. Then layer it with artificial small flowers with leaves.
  3. Arrange the iced cupcakes on top of it and decorate as you wish ……
