Cucumber / Kakkirikka Kalthappam (Sweetened)

Ingredients:

1 1/2 cup raw rice
1 large cucumber / kakkirikka
1 cup grated coconut
250 gm grated jaggery ( or as required to your taste )
salt to taste
coconut oil, as required
2-3 tbsp onion, sliced

Preparation:

  1. Wash and soak the rice in water for 2 hours.
  2. Peel and chop cucumber into pieces.
  3. In a blender, add drained rice, cucumber pieces, grated coconut, grated jaggery and salt and blend well to a smooth batter. Do not add water while grinding.
  4. Heat a frying pan on medium heat, add 2 tbsp oil and add 1 tbsp of sliced onion and fry till golden colour.
  5. Add 4-5 ladleful of batter into this pan. Cover with a lid and allow to cook until set.
  6. When the  bottom and sides turns brown, flip it over and cook the other side till golden brown.
  7. Remove from flame and repeat the same process with the rest of the batter..
  8. Cut into pieces and serve…
