Ingredients:
1 1/2 cup raw rice
1 large cucumber / kakkirikka
1 cup grated coconut
250 gm grated jaggery ( or as required to your taste )
salt to taste
coconut oil, as required
2-3 tbsp onion, sliced
Preparation:
- Wash and soak the rice in water for 2 hours.
- Peel and chop cucumber into pieces.
- In a blender, add drained rice, cucumber pieces, grated coconut, grated jaggery and salt and blend well to a smooth batter. Do not add water while grinding.
- Heat a frying pan on medium heat, add 2 tbsp oil and add 1 tbsp of sliced onion and fry till golden colour.
- Add 4-5 ladleful of batter into this pan. Cover with a lid and allow to cook until set.
- When the  bottom and sides turns brown, flip it over and cook the other side till golden brown.
- Remove from flame and repeat the same process with the rest of the batter..
- Cut into pieces and serve…
