Pink Yogurt Dip

Ingredients:

1/4 of 1 big beetroot ( about 5 pieces )
3/4-1 cup yogurt
salt to taste
1/2 tsp pepper powder ( as required )
1 1/2 tsp olive oil
2 tbsp coriander leaves, finely chopped
1/2 garlic, grated or finely chopped

Preparation:

  1. Cook the beetroot pieces adding enough water till soft and then grind to a paste adding little water and keep it aside.
  2. In a bowl, add yogurt and beat well using a spoon / whisk till smooth and creamy.
  3. Add pepper powder, salt, olive oil and chopped coriander leaves and mix well.
  4. Add beetroot paste and mix well.
  5. Then add finely chopped / grated garlic and mix well. Adjust salt and serve with pita bread, chicken fry etc…
