Egg Schezwan Noodles

Ingredients:

200 gm noodles
2 eggs
1 tsp garlic, finely chopped
1/4 cup cabbage, thinly sliced
1/4 cup carrot, thinly sliced
1/4 cup capsicum, thinly sliced
1/4 cup beans, sliced
1/4 cup spring onion ( white part )
1/4 cup spring onion ( green part )
1 tbsp tomato sauce
2 tbsp schezwan sauce
1/2 tbsp soy sauce
1/4 tsp pepper powder
salt to taste
oil, as required

Preparation:

  1. Boil 1 1/2 litre water in a large pan adding 1 tbsp oil and 1 1/2 tsp salt.
  2. Add noodles to this and after 1 minute, mix well using fork and cook till done. Drain the water and and sprinkle 1/2 tbsp oil all over the noodles and mix evenly with a fork and keep it aside.
  3. In a bowl, whisk eggs adding salt and a pinch of pepper powder. Heat 1 tsp oil in a pan and scramble the beaten eggs and keep it aside.
  4. Heat 2 tbsp oil in a thick bottomed pan and add chopped garlic and mix well.
  5. Add sliced cabbage, carrot, capsicum, beans and spring onion whites and stir well for a minute at high flame.
  6. Add scrambled eggs into this and mix well.
  7. Then reduce the flame to low and add tomato sauce, schezwan sauce and soy sauce and mix well.
  8. Then add cooked noodles, 1/4 tsp pepper powder and little spring onion greens and mix well at high flame for 2-3 minutes until the noodles are well coated with the sauces. Adjust the salt and mix well.
  9. Transfer to a serving dish and garnish with chopped spring onion and serve hot…
