Ingredients:
1 1/2 cups plain flour
1 1/2 tsp baking powder
1 tsp ground cinnamon
55 gm/1/4 cup butter
50 gm / 1/4 cup sugar , plus extra for sprinkling
125 ml/ 1/2 cup buttermilk
1 cup blueberries
Preparation:
- Preheat the oven to 180 degree celcius. Line two baking sheets with baking paper/ parchment paper.
- In a mixing bowl, sift together the plain flour, baking powder and ground cinnamon.
- Rub in the butter until the mixture resembles bread crumbs. Then stir in the sugar.
- Add the buttermilk and blueberries and stir until just combined.
- Spoon mixture in small mounds, well apart, on the prepared baking sheets. Sprinkle with sugar.
- Bake for about 20 minutes until golden brown and firm in the centre.
- Remove from the oven and serve…..
