Ingredients:
For Pancake:
1 cup plain flour
1/4 tsp turmeric powder
1 egg
salt to taste
water, as required
For Filling:
2 ripe bananas / nendrapazham, chopped
1 cup grated coconut
3-4 tbsp sugar
1/4 tsp cardamom powder
10-12 cashew nuts, chopped
10-12 raisins
1 tbsp ghee
For Sugar Syrup:
1/4 cup sugar
1/4 cup water
1 tsp lemon juice
1/4 tsp cardamom powder
Preparation:
- In a bowl, add plain flour, egg, turmeric powder and salt and mix well using a whisk.
- Add enough water and make a smooth loose batter without any lumps and keep it aside.
- To prepare the filling , heat ghee in a pan and roast cashew nuts and raisins.
- Add grated coconut into this and roast till light brown.
- Add chopped banana and fry till it turns soft and golden in colour on medium flame.
- Add sugar and cardamom powder and mix well. Switch off the flame.
- Heat a pan and pour a ladleful of batter and make thin dosa / pancakes.
- Remove it to a plate and place 1-2 tbsp of filling in its centre.
9. Then fold it from four sides and make a box. Repeat the same process with remaining batter and filling.
10. Prepare the sugar syrup by boiling sugar and water in a sauce pan adding cardamon powder and lemon juice for about 10 minutes in medium-low flame.
11. Transfer the lakkottappam to a serving plate and then pour sugar syrup over it and serve immediately…
