Banana Lakkottappam

Ingredients:

For Pancake:

1 cup plain flour
1/4 tsp turmeric powder
1 egg
salt to taste
water, as required

For Filling:

2 ripe bananas / nendrapazham, chopped
1 cup grated coconut
3-4 tbsp sugar
1/4 tsp cardamom powder
10-12 cashew nuts, chopped
10-12 raisins
1 tbsp ghee

For Sugar Syrup:

1/4 cup sugar
1/4 cup water
1 tsp lemon juice
1/4 tsp cardamom powder

Preparation:

  1. In a bowl, add plain flour, egg, turmeric powder and salt and mix well using a whisk.
  2. Add enough water and make a smooth loose batter without any lumps and keep it aside.
  3. To prepare the filling , heat ghee in a pan and roast cashew nuts and raisins.
  4. Add grated coconut into this and roast till light brown.
  5. Add chopped banana and fry till it turns soft and golden in colour on medium flame.
  6. Add sugar and cardamom powder and mix well. Switch off the flame.
  7. Heat a pan and pour a ladleful of batter and make thin dosa / pancakes.
  8. Remove it to a plate and place 1-2 tbsp of filling in its centre.

9. Then fold it from four sides and make a box. Repeat the same process with remaining batter and filling.
10. Prepare the sugar syrup by boiling sugar and water in a sauce pan adding cardamon powder and lemon juice for about 10 minutes in medium-low flame.
11. Transfer the lakkottappam to a serving plate and then pour sugar syrup over it and serve immediately…
