Strawberry Phirni


1/4 cup basmati rice
1 litre milk
3/4 cup sugar
1 cup strawberries, chopped
1/2 tsp cardamom powder

For Garnishing:

chopped pistachios
rose syrup / strawberry syrup
strawberry slices


  1. Wash and soak basmati rice in enough water for an hour. Drain the water and grind the rice to a coarse paste with 3 tbsp of milk and keep it aside.
  2. In a blender, add chopped strawberries and blend to a smooth puree and keep it aside.
  3. Heat milk in a heavy bottomed pan and bring it to a boil. Then reduce the flame to low and gradually add the rice paste, stirring continuously.
  4. Cook at low flame stirring continuously till the rice gets cooked completely.
  5. Then add sugar and mix well till the mixture thickens. Add cardamom powder and mix well.
  6. Switch off the flame and allow it to cool completely.
  7. Now add strawberry puree to the cooled phirni and mix it well.
  8. Pour them into serving glasses and then refrigerate.
  9. Garnish with strawberry syrup / rose syrup, chopped pistachios and strawberry slices…Serve chilled…
