Mathi Pori / Sardine Fry With Coconut

Ingredients:

300-350 gm sardines/ mathi, cleaned
1 1/2 tsp + 1/2 tsp chilli powder
3/4 tsp pepper powder
1/2 tsp fennel powder
1/4 tsp turmeric powder
10-12 shallots
1/2 cup grated coconut
1 tbsp crushed red chilli
1/2″ piece ginger, crushed
5 garlic cloves, crushed
1 sprig curry leaves, chopped
3 tbsp tamarind juice
salt to taste
3-4 tbsp coconut oil

Preparation:

  1. Clean the sardines and make slits on both sides of the fish.
  2. In a bowl, add 1 1/2 tsp chilli powder, pepper powder, fennel powder, turmeric powder and salt and mix well.
  3. Add sardines to this and marinate well. Keep it in the fridge for 30 minutes.
  4. In a small blender, add shallots, grated coconut, crushed red chilli and 1/2 tsp chilli powder and just crush them together and keep it aside.
  5. Heat coconut oil in a pan at medium flame and place the marinated sardines and fry them on one side.
  6. Then turn to other side and add crushed ginger, garlic and curry leaves and fry till done.
  7. When both sides are fried well, add coconut mixture, tamarind juice and little salt and mix gently without breaking the fish.
  8. Then cook it covered for 2-3 minutes at medium-low flame. Garnish with curry leaves and serve hot…
