Spicy Chicken Roast / Masala


1 kg chicken, cut into pieces
3 medium onions, chopped
2 + 2 green chillies, slit
1 1/2 tbsp ginger, crushed
5-6 garlic cloves, crushed
3/4 tsp turmeric powder
1 1/2 tbsp red chilli powder
1 1/2 tbsp kashmiri chilli powder
1 tbsp coriander powder
1 tbsp chicken masala
1/2 -1 tsp pepper powder
1/2 tsp garam masala
1 medium tomato, chopped
3 cardamoms
3 cloves
1 piece cinnamon
2 dry red chillies
2-3 tbsp coriander leaves, chopped
2 sprig curry leaves
salt to taste
3-4 tbsp coconut oil


  1. Heat oil in a pan and add cardamoms, cloves, cinnamon, dry red chillies and curry leaves and saute.
  2. Add chopped onions and little salt and saute well till soft.
  3. Add slit green chillies, crushed ginger and garlic and saute well till raw smell goes.
  4. Reduce the flame and add turmeric powder and mix well.
  5. Add cleaned chicken pieces, mix well and cook covered at medium flame for 10 minutes.
  6. Add red chilli powder, kashmiri chilli powder, coriander powder, chicken masala, garam masala, pepper powder and salt and mix well.
  7. Add 4-5 tbsp hot water and mix well and cook covered for 10 minutes.
  8. Then add chopped tomato and coriander leaves, mix well and cook covered for another 8-10 minutes.
  9. Add 2 slit green chillies and few curry leaves and mix well for 2-3 minutes at low flame.
  10. Switch off the flame and keep it covered for 5 minutes…Serve with ghee rice, appam, chapati etc..
  • Adjust the spice powders according to your spice level…
