Ingredients:
1/2 kg tapioca / kappa
1/4 + 1/2 tsp turmeric powder
5 green chillies, chopped
3 garlic cloves, chopped
1 sprig curry leaves
2 medium onions, chopped
1 tsp chilli powder
1/2 tsp coriander powder
1/2 tsp garam masala
1-1 1/2 tsp pepper powder
1/4 tsp fennel powder
3 eggs, beaten
salt to taste
2 tbsp coconut oil
Preparation:
- Peel and cut the tapioca into small cubes and cook it adding 1/4 tsp turmeric powder, salt and enough water till soft. Drain the water and keep it aside.
- Heat coconut oil in a large pan / kadai and add chopped garlic, green chillies, onions and curry leaves and saute till onion turns transparent.
- Add 1/2 tsp turmeric powder, chilli powder, coriander powder, garam masala, pepper powder, fennel powder and enough salt and saute till raw smell goes.
- Add beaten eggs into this and scramble it well.
- Add the cooked tapioca, mix well and mash evenly using wooden spatula.
- Adjust the salt and add little more pepper powder, if required.
- Switch off the flame and garnish with some chopped onion and green chillies…Serve hot..
