Ingredients:
1 cup basmati rice
2 cups cabbage, chopped
2 eggs, beaten
1 medium onion, chopped
2 green chillies, chopped
2-3 garlic cloves, chopped
1 tsp chilli powder
1/4 tsp turmeric powder
1/4 tsp pepper powder
salt to taste
2 tbsp coriander leaves, chopped
1 tsp cumin seeds
1 tsp mustard seeds
1 tbsp oil
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Heat oil in a thick bottomed pan and splutter mustard seeds and cumin seeds.
- Add chopped onion, green chillies and garlic and saute for 2 minutes.
- Add chilli powder, turmeric powder, pepper powder and salt and saute until the raw smell goes.
- Add chopped cabbage and saute well until the cabbage is soft and cooked.
- Now add the beaten eggs and scramble it well along with the cabbage.
- Then add 2 cups of cooked rice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
