Cabbage and Egg Rice

Ingredients:

1 cup basmati rice
2 cups cabbage, chopped
2 eggs, beaten
1 medium onion, chopped
2 green chillies, chopped
2-3 garlic cloves, chopped
1 tsp chilli powder
1/4 tsp turmeric powder
1/4 tsp pepper powder
salt to taste
2 tbsp coriander leaves, chopped
1 tsp cumin seeds
1 tsp mustard seeds
1 tbsp oil

Preparation:

  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat oil in a thick bottomed pan and splutter mustard seeds and cumin seeds.
  3. Add chopped onion, green chillies and garlic and saute for 2 minutes.
  4. Add chilli powder, turmeric powder, pepper powder and salt and saute until the raw smell goes.
  5. Add chopped cabbage and saute well until the cabbage is soft and cooked.
  6. Now add the beaten eggs and scramble it well along with the cabbage.
  7. Then add 2 cups of cooked rice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
