Cucumber / Kakkirikka Ozhichu Curry

Ingredients:

1 cucumber ( 1-1 1/2 cup )
1 medium tomato
3-4 shallots, chopped
3 green chillies, chopped
1 1/2-2 cup thick curd / yogurt
1/2 tsp turmeric powder
1/2 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
salt to taste
1- 1 1/2 tbsp coconut oil

Preparation:

  1. Chop the cucumber into small pieces.
  2. Heat coconut oil in a pan and splutter mustard seeds.
  3. Add dry red chillies, curry leaves, chopped green chillies and shallots and saute at low flame.
  4. Add turmeric powder and salt and mix well.
  5. Add chopped tomato and saute. Don’t overcook.
  6. Switch off the flame and add chopped cucumber and mix well.
  7. Then add beaten yogurt into this and mix well. Serve with rice…
