Rava Uttappam / Mixed Vegetable Rava Uthappam

Ingredients:

1 cup rava
1/2 cup curd / yogurt
1 carrot, grated
1 big onion, finely chopped
1 tomato, finely chopped
2 green chillies, finely chopped
1-2 tbsp coriander leaves, chopped
salt to taste
1/4 tsp baking soda
oil, as required

Preparation:

  1. In a bowl, add rava, yogurt and 1 cup of water and mix well and keep it covered for 15 minutes.
  2. In another bowl, add grated carrot, chopped onion, tomato, green chillies, coriander leaves and mix well adding little salt. Keep it aside.
  3. After 15 minutes, mix well the batter and transfer to a blender and blend well to a fine paste. Add 1 tbsp water if required and blend again to a thick dosa batter consistency.
  4. Transfer to a bowl and add baking soda and salt and mix well.
  5. Heat a pan at medium flame and grease little oil.
  6. Pour a ladleful of batter and when holes starts to appear add vegetable mix and gently press it with spatula.
  7. Drizzle a tsp of oil all over and around the uthappam. Once the base is golden brown , turn over and cook the other side.
  8. Remove from the pan and serve hot with chutney or sambar…
