Ingredients:
1 1/4 cup plain flour
1 tsp baking powder
1/2 cup light brown sugar
1/2 tsp salt
1 tsp mixed spice powder
1/2 cup pumpkin puree
2 1/2 tbsp unsalted butter, melted
1 large egg
For the glaze:
1 cup icing sugar
1 tsp mixed spice powder
1 tbsp milk (add more if required to get the desired consistency)
1/2 tsp vanilla essence
Preparation:
- Preheat oven to 180 degree celcius. Lightly spray the doughnut pan with baking spray and keep it aside.
- In a large bowl, whisk together plain flour, baking powder, brown sugar, salt and mixed spice powder.
- In another bowl, whisk together pumpkin puree, melted butter and egg.
- Add wet ingredients to the flour mixture and gently fold until just combined. Don’t over mix.
- Fill about 2/3 full of batter into the prepared doughnut pan using a spoon or a piping bag.
- Then bake in the preheated oven for 10-12 minutes or until the donuts spring back when lightly pressed.
- Allow to cool a few minutes in the pan and then transfer to a wire rack to cool completely.
- To make the glaze, in a bowl combine icing sugar, mixed spice powder, milk and vanilla essence and whisk well until smooth.
