Glazed Baked Pumpkin Donuts

Ingredients:

1 1/4 cup plain flour
1 tsp baking powder
1/2 cup light brown sugar
1/2 tsp salt
1 tsp mixed spice powder
1/2 cup pumpkin puree
2 1/2 tbsp unsalted butter, melted
1 large egg

For the glaze:

1 cup icing sugar
1 tsp mixed spice powder
1 tbsp milk (add more if required to get the desired consistency)
1/2 tsp vanilla essence

Preparation:

  1. Preheat oven to 180 degree celcius. Lightly spray the doughnut pan with baking spray and keep it aside. 
  2. In a large bowl, whisk together plain flour, baking powder, brown sugar, salt and mixed spice powder.
  3. In another bowl, whisk together pumpkin puree, melted butter and egg.
  4. Add wet ingredients to the flour mixture and gently fold until just combined. Don’t over mix.
  5. Fill about 2/3 full of batter into the prepared doughnut pan using a spoon or a piping bag.
  6. Then bake in the preheated oven for 10-12 minutes or until the donuts spring back when lightly pressed.
  7. Allow to cool a few minutes in the pan and then transfer to a wire rack to cool completely.
  8. To make the glaze, in a bowl combine icing sugar, mixed spice powder, milk and vanilla essence and whisk well until smooth.
