Potato Mayonnaise


1 medium potato
1/4 cup milk
1/4 cup oil
2 garlic cloves
1 tbsp vinegar
salt to taste
1/2 tsp pepper powder (optional)


  1. Peel and chop the potato into pieces and boil well until cooked.
  2. In a blender, add boiled potato pieces, milk, oil, garlic cloves, vinegar, pepper powder and salt and grind well to a thick and creamy smooth paste.
  3. Transfer to a bowl and serve as a dip for chips, fries or as spread in sandwiches or as dressing in salads…
