Vegetable and Paneer Kurma

Ingredients:

1 cup paneer cubes
1 medium potato
1 medium carrot
8 beans, chopped
1/4 cup frozen peas
1/2 inch ginger, finely chopped
2 garlic cloves, finely chopped
1 medium onion, finely chopped
1 sprig curry leaves
2 green chillies, chopped
1/2 tsp fennel seeds
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 cup grated coconut
10 cashew nuts
1/2 tsp pepper powder
2 tbsp coriander leaves, chopped
salt to taste
2 – 2 1/2 tbsp oil

Preparation:

  1. Peel and chop potato and carrot into small cubes.
  2. Grind grated coconut with cashew nuts and 1/2 cup water to a smooth paste and keep it aside.
  3. Heat oil in a pan and splutter fennel seeds.
  4. Add finely chopped ginger, garlic, onion and curry leaves and saute well at medium flame till onion gets cooked.
  5. Add chopped potato, carrot, beans, peas, green chillies and salt and mix well.
  6. Then add turmeric powder, coriander powder and garam masala and saute well at medium flame for a minute.
  7. Add 1 1/2 cup of water into this and allow to boil. Then cook covered for 7-8 minutes at low-medium flame.
  8. Add the ground paste and paneer cubes and mix well.
  9. Add 1/2 cup of hot water and boil for 2-3 minutes.
  10. Add pepper powder and chopped coriander leaves and mix well.
  11. Adjust the salt and switch off the flame. Serve hot…
