Peechinga Mezhukkupuratti / Ridge Gourd Stir Fry

Ingredients:

1 big ridge gourd / peechinga, chopped ( 2 cups)
6 shallots
4-5 dry red chillies ( add to your spice level )
1 sprig curry leaves
1/2 tsp turmeric powder
1 tsp mustard seeds
salt to taste
1 1/2 tbsp coconut oil

Preparation:

  1. Peel and chop ridge gourd into small pieces.
  2. Crush shallots, dry red chillies and few curry leaves together and keep it aside.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add crushed mixture and saute till the raw smell goes.
  5. Add chopped ridge gourd, turmeric powder and salt and mix well.
  6. Add curry leaves and cook covered at low flame till completely cooked, stirring occasionally.
  7. Remove from the flame and serve with rice and other side-dishes…
