Ingredients:
1 big ridge gourd / peechinga, chopped ( 2 cups)
6 shallots
4-5 dry red chillies ( add to your spice level )
1 sprig curry leaves
1/2 tsp turmeric powder
1 tsp mustard seeds
salt to taste
1 1/2 tbsp coconut oil
Preparation:
- Peel and chop ridge gourd into small pieces.
- Crush shallots, dry red chillies and few curry leaves together and keep it aside.
- Heat oil in a pan and splutter mustard seeds.
- Add crushed mixture and saute till the raw smell goes.
- Add chopped ridge gourd, turmeric powder and salt and mix well.
- Add curry leaves and cook covered at low flame till completely cooked, stirring occasionally.
- Remove from the flame and serve with rice and other side-dishes…
