Unniyappam

Ingredients:

1 1/2 cup raw rice / pachari
3-4 small ripe bananas
1 cup jaggery syrup ( melt jaggery adding water )
1 tsp cardamom powder
1 tsp black sesame seeds
2 tbsp sliced coconut
a pinch of salt
1 tbsp ghee / oil
oil for frying

Preparation:

  1. Wash and soak the raw rice in water for 3 hours.
  2. In a blender, add drained rice and grind it with bananas and strained jaggery syrup to a smooth batter.
  3. Transfer it to a bowl and keep it covered for 7-8 hours. Adjust the consistency of water.
  4. Heat ghee / oil in a small frying pan and fry the coconut bits till light brown.
  5. Add this fried coconut bits and sesame seeds to the batter and mix well.
  6. Add cardamom powder and salt and mix well.
  7. Heat oil in an unniyappam pan at medium flame.
  8. When oil becomes hot, pour a spoonful of batter into each hole and cook on low-medium flame till the sides gets cooked.
  9. Then turn it using a skewer or spoon gently and cook the other side until it turns golden brown colour and cooked.
  10. Remove from the pan and drain them on a paper towel…Serve hot..
