Ingredients:
300 gm beans
1/4 cup vanpayar / red beans ( 1/2 cup cooked)
1/2 cup grated coconut
4 shallots, thinly sliced
3-4 green chillies
1/4 tsp cumin powder
1/4 tsp turmeric powder
1 sprig curry leaves
1 tsp mustard seeds
salt to taste
1 1/2 tbsp coconut oil
Preparation:
- Soak the vanpayar in water overnight and pressure cook it adding enough water and salt. Drain the water and keep it aside.
- Chop the beans into small pieces and keep it aside.
- Heat oil in a pan and splutter mustard seeds.
- Add sliced shallots, curry leaves and green chillies and saute well.
- Add chopped beans, turmeric powder, cumin powder and salt and mix well.
- Sprinkle little water and cook covered at low flame, stirring occasionally.
- Add grated coconut to this and mix well.
- Then add cooked vanpayar and mix well for 2-3 minutes until it is dry. Remove from flame and serve with rice…
