Carrot, Beans and Spinach Thoran

Ingredients:

1 big / 1 cup carrot, peeled and chopped
1 cup beans, chopped
1 cup spinach, chopped
1 small onion, chopped
3 green chillies, chopped
1 sprig curry leaves
1/2 tsp turmeric powder
1/2 cup grated coconut
salt to taste
2 tbsp coconut oil

Preparation:

  1. Chop carrot and beans into fine pieces.
  2. Wash and chop spinach into very small pieces.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add chopped onion, green chillies and curry leaves and saute well.
  5. Add chopped carrot, beans, turmeric powder and salt and mix well.
  6. Cook covered at low flame till soft and cooked, stirring in between.
  7. Add grated coconut into this and mix well for 1-2 minutes.
  8. Then add chopped spinach and mix well. Adjust the salt and cook covered till done.
  9. Switch off the flame and serve as a side dish with rice…
